Ingredients
Blended with frozen lychees into a jug. Peak season, peak summer.
When lychees are on and it is 35 degrees, this is what to do with them. Freezing the fruit first means you need almost no ice, so the drink stays intense instead of watering down as it sits.
Method

Freeze the peeled, stoned lychees in a single layer on a tray for at least 4 hours, or overnight. Frozen in a clump they will not blend evenly.

Put the frozen fruit, vodka, lime juice, cordial and ice into a blender.

Blend on high for 30 to 45 seconds, until completely smooth. Stop and scrape down the sides once if it stalls.

Taste. Add cordial if it needs sweetness, lime if it tastes flat, a little more ice if it is too loose.

Pour into chilled glasses, garnish with mint and lime, and serve immediately — it starts separating within about ten minutes.
Tips

Alcohol lowers the freezing point, so do not be tempted to add more vodka hoping it will hold together. Above roughly 10% it will not stay frozen at all.

Preserved lychees work out of season — drain them well and freeze them the same way.

For a non-alcoholic jug, replace the vodka with 180 ml of cold water and add another 20 ml of cordial.
