Description

Australian balsamic with a sweet lychee finish — rich, syrupy and more complex than a plain vinegar, the acidity balanced by real fruit.

Thicker and sweeter than you would expect from a vinegar, so it clings to what you pour it over rather than running straight off.

Over salad leaves and soft cheese, on strawberries, through roast vegetables, or reduced down for seafood.

Our Orchard

Lush Lychees is a family farm at South Yaamba, just north of Rockhampton, growing premium lychees for domestic and international markets. We grow ten varieties across the property, which means we can pick the best of each one as it ripens through December and January.

Every lychee is hand-picked at full ripeness, cooled within hours and kept cold the whole way to you. That care is why our fruit arrives tasting like it did in the orchard and keeps up to 14 days in the fridge.

Find the most frequently asked questions below.
  • Yes. It's a blend of real balsamic vinegars, some aged up to seven years and some up to twelve, made barrel-style from a balsamic culture, Australian balsamic vinegar and concentrated grape must, then brewed with lychee.

  • Years but for labelling requirements, three years, and it doesn't need refrigerating at any point.

  • No, and we'd rather tell you than let you assume. Our balsamic is made under contract by a specialist producer, to their recipe and their process. Making good balsamic takes barrels and years, so we went to someone who already had both, and supplied them with our lychees.

  • Yes, real lychee at 5%, brewed with the fruit rather than flavoured after the fact. That's the proportion that gives the fruit finish without unbalancing the vinegar, and it's declared on the label.

  • Yes, noticeably sweeter than an ordinary vinegar and more concentrated with it. A balsamic is inherently sweet-tart, and the lychee softens the sharp edge further and adds a floral, tropical top note.

    The practical effect is that it's friendlier over fruit and soft cheese than a straight balsamic, and it needs a lighter hand in a dressing.

  • Thicker than a balsamic vinegar, but not as thick as a balsamic glaze. It clings to what you pour it over rather than running straight to the edge of the plate, and it still pours, so you never need to warm or thin it. The body comes from a slow brewing process, which is what keeps the sweet-tart balance intact.

    • Whisked into a vinaigrette with a good olive oil
    • Drizzled over strawberries, peaches or fresh lychees
    • Over burrata, brie, goat's cheese or a caprese
    • Reduced a little further into a glaze for pork, duck, chicken or roast vegetables

    Use it sparingly. It's concentrated, and a teaspoon does more than a tablespoon of ordinary vinegar.

  • No. Vinegar is self-preserving thanks to its acidity. Keep it in a cool, dark cupboard with the cap on, before and after opening.

  • Vinegar by its nature is both gluten free and vegan, and this one is no exception.

  • Yes, naturally. Balsamic vinegar is made from grapes, and grapes carry sulphites of their own. None are added to this product.
