Summer Fruit Salad with Lychee Syrup

Ingredients

  • 80 ml Lush Lychees Lychee Cordial
  • 1 tablespoon fresh lime juice
  • 2 peaches or nectarines, sliced
  • 1 mango, diced
  • 250 g strawberries, hulled and halved
  • 200 g fresh lychees, peeled and stoned
  • 125 g blueberries
  • A small handful of mint leaves, torn

Cordial used neat, as a dressing. This is the Christmas Day fruit salad.

Most fruit salads are just cut fruit in a bowl. A spoonful of cordial poured over draws a little juice out of everything, and within half an hour the whole bowl is sitting in its own light syrup. Our harvest lands in the same fortnight as Christmas, so make it when fresh lychees are on the table anyway.

Method

  1. Whisk the cordial and lime juice together in a small bowl. That is the whole dressing.

  2. Prepare the fruit into a large glass bowl, adding the strawberries and blueberries last so they sit on top and don't get crushed.

  3. Pour the syrup over and turn the fruit through it with your hands rather than a spoon, hands bruise fruit far less.

  4. Cover and chill 30 to 60 minutes, turning once halfway.

  5. Scatter the mint over just before it goes to the table.

Tips

  • Dress it no more than two hours ahead, or the berries soften and the mango goes cloudy.

  • Leave banana out, it browns and muddies the syrup.

  • The syrup in the bottom of the bowl is the best part. Pour it over ice cream, or top it with soda.
