Lychee Spritz

Ingredients

  • 40 ml Lush Lychees Lychee Cordial
  • 200 ml chilled soda water
  • 2 lime wedges
  • 4–5 fresh mint leaves
  • Ice, and a fresh lychee to garnish

To make a jug (serves 8)

  • 250 ml Lychee Cordial (one bottle), 1.25 L soda water, 1 lime sliced into wheels, a handful of mint, plenty of ice

The one we pour at the farm gate. Three ingredients, thirty seconds, no bar skills required.

If you only ever make one thing with a bottle of lychee cordial, make this. The lime stops it being sweet, the mint gives it lift, and it works just as well as a jug on the table — which is how we serve it on hot afternoons at the orchard.

Method

  1. Fill a tall glass to the top with ice. A full glass melts more slowly than a half-full one, so the drink stays sharp instead of watering down.

  2. Pour in the cordial. Squeeze in both lime wedges and drop them in.

  3. Clap the mint between your palms once to wake up the oils, then add it.

  4. Top with soda and stir once, gently, from the bottom up. Garnish and serve.

  5. For the jug: combine cordial and lime wheels, add ice, top with soda, stir once. Mint goes in last so it stays green.

Tips

  • Taste before you top up. We pour one part to five, but go to one part to four if you like it sweeter.

  • Sparkling mineral water gives a rounder result than soda. Tonic works, but the quinine fights the lychee.

  • Freeze cordial diluted 1:5 into ice cubes — the drink then gets stronger as it melts, not weaker.
