Ingredients

  • 60 ml Lush Lychees Lychee Liqueur
  • 30 ml Lush Lychees Lychee Vodka (optional, for more backbone)
  • 25 ml fresh lemon juice
  • 1 egg white, or 25 ml aquafaba (chickpea tin liquid) for a vegan version
  • Ice
  • A few drops of bitters, to finish

A proper cocktail-bar drink with a foam top, in about four minutes.

A sour is spirit, citrus, sugar and something to make foam. Our liqueur covers the sugar, so the recipe collapses to three things and a shake. The foam is what makes it look like it cost twenty dollars.

Method

  1. Put everything except the ice into the shaker and shake hard for 15 seconds with no ice at all. This is called a dry shake and it is what builds the foam.

  2. Open the shaker, fill it with ice, and shake hard again for another 15 seconds to chill and dilute.

  3. Double strain into a chilled coupe or a short tumbler.

  4. Let it stand for 30 seconds so the foam settles into a clean layer on top.

  5. Drop three or four drops of bitters onto the foam and drag a toothpick through them if you want a pattern.

Tips

  • The dry shake first, then the ice. Doing it the other way round gives you a thin, disappointing head.

  • Aquafaba behaves almost identically to egg white and keeps the drink vegan.

  • If raw egg is a concern for anyone at the table, use aquafaba for the whole batch.
