Lychee Slushie

Ingredients

  • 1 bottle (250 ml) Lush Lychees Lychee Cordial
  • 1 L cold water
  • Optional: the juice of 1 lime, which keeps the flavour from reading flat once it is frozen

One bottle, one litre of water, straight into the machine. That is the whole recipe.

A slushie machine needs more sugar in the mix than you would expect, too little and it freezes into a solid block instead of slush. Our usual one-to-five drinking dilution sits just under the line, so for the machine you go one part cordial to four parts water. That single change is the entire recipe.

Method

  1. Stir the cordial and water together in a jug until completely combined. If sugar settles at the bottom, the mix freezes unevenly.

  2. Chill it in the fridge first if you have time, cold mix freezes in about half the time.

  3. Pour into the machine, staying below the maximum fill line. The mix expands as it freezes.

  4. Run for 45–60 minutes, until it holds a soft peak. Serve straight away.

Tips

  • Do not use the 1:5 drinking dilution here. It is not sweet enough to freeze into slush and can set solid instead.

  • No machine? Freeze the same mix in a shallow tray and drag a fork through it every 30 minutes for 3 hours. That is a granita, and it is very good.

  • Scaling up is just the same ratio, 8 bottles to 8 litres of water fills a 10 L commercial bowl.
