Lychee Mojito

Ingredients

  • 45 ml white rum
  • 30 ml Lush Lychees Lychee Cordial
  • 20 ml fresh lime juice (about half a lime)
  • 8 fresh mint leaves, plus a sprig to finish
  • Soda water, to top, and crushed ice

Lychee Gin Fizz variation

  • 45 ml gin, 30 ml Lychee Cordial, 20 ml lemon juice, soda water to top

Cordial in place of sugar syrup, which is what it was made for, plus a gin fizz on the same base.

A mojito is really just rum, lime, mint and sugar. Swapping the sugar syrup for lychee cordial changes the whole drink without adding a single step: you get the sweetness you need, plus something soft and floral underneath the mint.

Method

  1. Put the mint and lime juice in the bottom of a tall glass. Press the mint three or four times with the end of a wooden spoon, bruise it, don't shred it. Shredded mint turns bitter and leaves black flecks.

  2. Add the rum and cordial and stir to combine.

  3. Fill the glass to the top with crushed ice.

  4. Churn by stirring the ice up from the bottom, three or four turns, then top the glass back up with more ice.

  5. Add a splash of soda and finish with a mint sprig, slapped once between your hands.

  6. For the gin fizz: shake gin, cordial and lemon juice hard with ice for 10 seconds, strain over fresh ice, top with soda.

Tips

  • No crushed ice? Wrap cubes in a clean tea towel and hit them with a rolling pin.

  • For a non-alcoholic version, leave out the spirit and add another 30 ml of soda.

  • For a crowd, mix the rum, cordial and lime in a jug ahead (no mint, no ice) and build each glass to order.

Lychee Mojito
