  • 30 ml Lush Lychees Lychee Coulis, chilled
  • 120 ml prosecco, well chilled
  • A fresh lychee or a twist of lime, to garnish

A spoon of coulis in the base of the glass, topped with prosecco. That is the whole recipe.

A Bellini is a peach purée topped with prosecco, and the coulis stands in perfectly — it is already smooth, already sweetened and already the right thickness to sit in the base and rise slowly through the bubbles. Christmas morning, Mother's Day, New Year's Eve.

Method

  1. Chill both the coulis and the prosecco properly. A warm base and cold wine will foam over the glass.

  2. Spoon the coulis into the bottom of a champagne flute.

  3. Pour the prosecco in slowly, tilting the glass, down the inside edge rather than straight into the middle.

  4. Give it one gentle stir with a long spoon, from the bottom up, just enough to marble it. Garnish and serve.

  5. For a jug: stir 180 ml of coulis into a bottle of prosecco just before pouring, and serve immediately.

Tips

  • A non-alcoholic version with sparkling white grape juice is genuinely good, not a compromise.

  • Don't stir it fully. The gradient from deep at the bottom to pale at the top is the look.
