Ingredients

  • 8 scoops good vanilla ice cream
  • 160 ml Lush Lychees Lychee Liqueur (40 ml per serve)
  • Fresh lychees, peeled and stoned
  • Toasted flaked almonds or crushed pistachios
  • Optional: a little grated lime zest

Poured over ice cream instead of coffee. Dessert and a drink in one glass.

An affogato is usually espresso over vanilla ice cream. Swap the coffee for our liqueur and you get something floral and cold that works after a heavy meal when nobody wants another course but everybody wants something.

Method

  1. Chill four small glasses or coupes in the freezer for 15 minutes.

  2. Put two scoops of ice cream into each glass and return them to the freezer while you get everything else ready.

  3. Take the liqueur out of the fridge — it should be cold, not room temperature, or it melts the ice cream instantly.

  4. Bring the glasses to the table with the bottle and pour at the table, 40 ml over each. The pour is the moment; doing it in the kitchen wastes it.

  5. Scatter with lychees, nuts and lime zest and eat straight away with a spoon.

Tips

  • Small glasses. This is rich and two scoops is plenty.

  • Works with coconut or macadamia ice cream as well as vanilla.

  • For a non-alcoholic version, use our Lychee Cordial diluted 1:2 with cold water instead.
